Quinoa with avocado+ spinach and rucola
Recipe
For 2 servings you need:
1 small cup of quinoa
1 small avocado
1 tuna can
rucola and spinach+ salad dressing (vinegar, salt, olive oil)
salt
pepper
parmigiano cheese
Cook quinoa for 15 minutes. In the meantime squish avocado and tuna together to get a chunky mixture. Add salt and pepper to taste. Rinse salad with lukewarm water and pour over some olive oil, vinegar and a pinch of salt. When quinoa is cooked, mix together avocado/tuna and quinoa.
Distribute salad evenly over two plates, add quinoa on top and grate some cheese.
Voila!
Time: 20minutes
Mess: 1 pot for quinoa, 1 large cup for avocado mixture, 1 salad bowl, 2 plates, so that makes… 2/10

Yesterday’s lunch.
Salmon with sesame and linseed, champignons, rucola and spinach.
Even soup was sad today.
Ok. I’m overreacting. Should be a mousse, recipe sent by http://feed-well.tumblr.com/, but I didn’t have flour, so I made soup instead.
My grandmother sent me some scones. I had them for breakfast with fresh goat cheese and thyme from our garden.
Lunch: wholegrain home-made tortilla, tuna&avocado, rucola, tomatoes, mache and spinach.
YUM!
